Minimum of 25 pieces for items sold by the piece and minimum of 24 servings for items sold per person. Less than minimums welcome, please inquire about the slight upcharge. Most items can be delivered as trays.All our trays are garnished with seasonal fresh flowers and will look beautiful on any buffet.

Gorgonzola and Walnut Terrine $3.95 per person
Dolce (mild) gorgonzola, cream cheese, mild soft goat cheese and chives are blended together and layered in a long terrine with toasted walnuts. The terrine is then unmolded and served with sliced baguette and crackers.

Wine note: A bright, tangy sparkling wine such as the inexpensive Nonvintage Domaine Chandon Blanc de Noir will cut the richness of the cheese and walnuts.

Mini Quiches $2.35 per person, 2 quiches pp.
All of our mini quiches are also available in a phyllo crust, instead of the standard crust. Lorraine with bacon and Swiss cheese.Shiitake and white mushroom. Shrimp, lemon and tarragon. Southwest vegetarian. Sundried tomato. Salmon-dill.

Chips & Salsa $2.25 per person
Assorted Raquelita gourmet chips with your choice of 1 salsa and guacamole:
Pico de Gallo with cilantro and jalapeno. Green jalapeno and tomatillo salsa. Confetti corn with tomato and red onion. 3-melon salsa with fresh mint. Pineapple and cucumber with cilantro and chiles.

Roasted Poblano Guacamole & Chips $2.75 per person
A wonderful recipe we picked-up in New York City this summer!
Fresh avocado, roasted poblanos, grape tomatoes, red onion, lime juice and cilantro. We couldn’t stop eating it!

Mini Tortilla Wraps $1.75 each
Mini versions of customer favorites and some new selections:
Fruited cheese with ham: dried cherries or apricots, cream cheese, basil, lettuce & ham.
Spicy southwestern: roasted jalapeno, cream cheese, black olives and turkey.
Vegetarian: carrots, lettuce, black olives, sprouts and lettuce, southwest cream cheese.
Chicken Caesar: grilled chicken, Caesar spread, lettuce and parmesan cheese.

Pacific rim salmon tartare.
Kalamata olive tapenade.
Crème fraiche and black caviar.

Little puff pastry cups of different shapes, filled with tasty morsels.
Tarragon and mustard lobster salad.
Wild mushroom, garlic and thyme in cream. Coquilles St. Jacques scallops.

Roasted chicken, fresh ginger, chiles, cilantro and lime juice, with toasted coconut, served in a bib lettuce cup.
